Soon as they run those fingerprints through the NCD and the people he set up have not touched it and his prints are on it he's surely breached his probation.

It seemed okay for him to handle those particular drugs because he's setting up the guys and the armed response team is soon to be arriving outside to arrest the drug dealers when they arrive after Jimmy's fake call that the pizza place is being torched.
Jimmy was working for the cops at that point--a grass essentially. And a super grass in that he not only informed, but went further (on his own plan it appeared) to set up the bad guys to be caught. So handling the drugs was probably not of concern, since he was working for the plod themselves at that point...?
