if a fight between Saitama (the caped baldy) and superman (man of steel ) happens who will win

Based on strength alone from what I've seen in the movies/TV shows, I can definitely say Saitama will win. In the latest superman movie, he never did as much damage as Saitama did. If I put their strength into a scale where Saitama is 100 (highest), Superman would probably be a 10.

superman have a weakness that is kryptonite but not saitama he got no weakness and he did finish his enemies with a one punch that's something superman didn't do lol

From the anime, it seems that it is not explaining how Saitama obtain his power. I think just what the show said there is a God living in the Saitama's body and probably it is the reason some regular training make him extremely powerful.

I think when Superman just appeared, his power was unmatched to anyone but to make the comic book more interesting, more and more villains with greater power or strength so superman (and league members) can compete.

I think Saitama is showing power in entity scale level based on his final fight in the anime. We need to see if he is immune to magic based attacks. So far, we know flame attack is useless against him and I guess most elemental attacks won't work either.

He explained it in the 3rd (or 4th) episode, whenever he fought Carnage. He has a strict training regiment of 100 push ups, 100 sit ups, 100 squats, and a 10km run, everday.. Even if his bones are cracking.

Saitama's training is nowhere near as regular training . It is beyond that.
He kept do the push up, sit up, and sprint in every single day while fighting monster even when his bones were broken or seriously injured and let alone the wounds got healed by itself.
I don't think any human could do that..

One punch defeat is basically based on the weakest point....i.e. Finding a weakest point in anyone of anything, which no doubt includes superman as well..
As far as "superman has never defeated anyone with a single punch", is concerned, well according to his back story he is so powerful that he can even move earth out of its orbit, so he always have to keep himself in control

Well Saitamas "power" is that he's invulnerable and defeats anything with a single serious punch, no matter how strong or durable the opponent. So if he can hit Superman he wins.

On the other hand we saw that Saitama needs to breathe (had to hold his breath in Space) so if Superman can fly him into Orbit he could win I guess.
