What I don't understand is this:
Everyone has said that the zombies will kill you with just one touch, one touch and death, yet after they have been touched by the zombies and eaten they all scream and thrash about, how can they do that? They should be dead after the first touch.

I think it takes one touch to get the infection that will turn them into a zombie, not that they literally drop dead with one touch.

As we saw with Natasha, it takes a while to turn once infected, so the contestants would still be human until the moment of death.
