Season 3 - which chefs?

What chefs would you like to see featured in season 3? Personally, I think it'd be nice to get someone from the African continent, which has been totally ignored in these past two seasons. Pierre Thiam would be a good pick. Ok his restaurant is in New York, but he's doing great things with Senegalese cuisine and as the chefs featured in the best episodes of the show, has an interesting wider philosophy about the connection between food and culture.

Who would you like to see?

Rene Redzepi--His restaurant in Denmark is has been ranked #1 in the world for a number of years. His dishes are all basically plucked from the fields of Copenhagen.
