The Last Kingdom. Really? The last?

I like the name of the show The Last Kingdom, it’s a catchy name, but that’s all it is - not making much sense. Why the last? It wasn’t the last and wasn’t the first kingdom. And did you notice how many movies like having the word “last” in them? “The Last King”, “Star Wars: The Last Jedi”, “Transformers: The Last Knight”, “X-Men: The Last Stand” and so on.

It was the last of the Anglo-Saxon kingdoms still standing after the Viking had conquered the rest.

This ^

It's literally explained in the show, by King Alfred.

What a dumb take...

Last is a dramatic word. "This is the last!" So that's why it gets used in titles. It's attention-grabbing (or at least, attention-seeking)

Jes' Sayin' points out that it's about the last unconquered kingdom when the show starts. As it progresses, it is about the last kingdom needed to unite England into one land.
