I see the potential in all of the side characters and story line. I'm about midway through and honestly... if they want to tackle this again, they should turn it into a TV series.

I actually think you are onto something. Reminds me of last year's film See You in Valhalla (it is a family drama, so no plot connections, just similar abrupt ending pattern) - 90% of the film gives you one story and then it suddenly turns into something else and puff - it's gone. Tv series would give it more space to develop. However, I would prefer it to be mini-series, cause having too much side-tracks could also be silly in this case. Focus it on Briar Rose, Thomas, Linda and ''Van Helsing'' guy, give them more backstory and follow the Curse as it develops, giving them time and knowledge to defeat the demon.
