Why the faded colour?

Does every tv western today have to rinse the colour out?. I realize it's supposed to be for authenticity and yet we know the West didn't look like that unless everyone was colour blind back then. I'd like to go back to the rich colours of westerns in the fifties and sixties which for me was part of the pleasure of watching outdoor westerns.
And whats with all the beards that's not authentic either, more like modern fashionable men today.
