Arrowroot and Madeira

When the husband and wife chef team are making Beef Wellington they bump heads about the sequence of arrowroot and madeira. I thought it sounded a little odd at the time. I read nearly a dozen recipes for Beef Wellington and did not find either one in any of them. He said it was his take on the dish, but when does it become a different dish?
