complicated concepts for the menus. Are they briefed ahead of time?

These final meals at the chefs have to prepare are super intricate. It seems they must know what the theme is before they come to the show because I do not think they could think of all these different parts in the amount of time they have to prepare the meal.

They're talented chefs. They probably are given a few minutes to think about it but if they couldn't come up with three dishes by the time they get to the store, they probably should look for another job.
It's like asking Van Gogh to draw 3 pictures. Do you think he would have spent 3 days deciding what to draw and what colors to use?
