who's giant statue is buried in the sand in the first part of the movie?

It has never been revealed who it is. All we know is that it is of a Jedi.

Maybe it's not a Jedi. Maybe the Jedi knocked it over when they took over the planet.

Not that that matters, of course. What matters is that it looks AWESOME on film.

Maybe the sculptors just worked with the mountain they had. Looked more like a sideways Jedi, so they carved it that way
