I hope more movies will adopt this style

Though I dont think it was executed perfectly in this film, I really like the minimalist style of film making. I think the best example of which is Bone Tomahawk thus far.

Anyone know of other films in this style?

I strongly recommend you check out Haneke (if you haven't done so already). Michel Franco is another Mexican director (like Ripstein) that has adopted this style, although I'm not a great fan. You could also check out "Heli" by Amat Escalante. Brutal film.
