How is this series different from the others?

I know Fate has multiple series. I know Zero is the prequel to Stay Night, Unlimited Blade Works and Heaven's Feel. I know Fate started out as a Visual Novel (a glorified computer game) that had three paths. I heard the three paths are essentially the same story but in each path the main character, Shiro, has a different love interest. Is that the case? If show is everything such as plot, character development, story, etc... all the same but with a different woman winning the main character's heart?

of course not... the 3 routes has the same characters but thats it, different plot, events, different characters get the spotlight (just like how rider has hardly any role in ubw and sakura has no role in fate - sabers route - and ubw at all, but the main female in her own route), different themes.. only the beginning is the same as things happen differently it leads to totally different outcome, like the domino effect.

from wikipedia
"The main theme in Fate/stay night is "conquering oneself". There are three story lines in the visual novel; each has a different theme. The first one, Fate, is the "oneself as an ideal". The second one, Unlimited Blade Works, is "struggling with oneself as an ideal". The third one, Heaven's Feel, is "the friction with real and ideal"
