As far as whether they would have clapped back in the 20s through 40s, I don't know, but your claim that they don't clap is false. I've seen Germans clap way more often than I've seen them knock on tables. I've never lived in Germany, but I lived in Switzerland with some Germans and visited Germany and Austria a number of times. Also, keep in mind that this production is aimed at your average American viewer. They aren't going to know that Germans knock on tables.
