They say that pressed duck was pre-ordered when they are sitting at the table.
What I don't get is how did the watchmaker get someone in the restaurant to put the bomb in the duck press. Or do you always put a metal disk at the bottom of the press when making the duck sauce? That didn't make sense to me. Seemed like a really complicated way of blowing up a restaurant.
No, it was his way to know when the bomb is at the table and not at the kitchen, without being seen. The cameras would have recorded him. The complex setup gave Kate a way to slip out of the restaurant, because he didn't see clearly.
If he would have stayed somewhere close to see, then the movie would have been over. Yes, it was way over the top to kill lots of people for just one hand full, especially in London of all places. Even if they didn't get him on the restaurants cctv cams, they would have gotten him all over the place looking suspicious.
