Why a 1946 song for the theme?
I love Louis Jordan but using a song recorded 30 years
after the show takes place is a bit silly. Wouldn't it
be better to find a theme using rag time, or something
similar?

For the simple fact that the song fits the title, I'm guessing!
I understand your thinking though. Of course, if they wanted to make the series historically accurate, they would have probably gone with an earlier track but I don't think they are going for authenticity in the show itself either so it's no bother.
The series Plebs used a lot of Ska music, despite being set in Ancient Rome. It's just artistic licence.
Some of the dialogue is anachronistic too but it doesn't make it any less funny.
