It was an analogy to the story of there appearing to be only one person, when in reality there were 4. Like he said, people see what they want to see and instead of just one sugar cube, there were really 4 in his hand.

She got 4 sugar cubes because Benjamin hacked her successfully, therefore he took one sugar cube for himself. Remember all items (monkey and owl figures etc) collected from the places he hacked all throught the movie.
