3 Sisters??

I need this cleared up, were there really 3 sisters? If so, why did we never see a third during their childhood, and why did the housekeeper never refer to the third? Was she even real? Why were they referred to as twins, not triplets?

Indeed, they were 3. There were the twins, Adeline and Emmeline, and Vida who was actually their step-sister and their cousin. They all had the same father (who had the twins with his sister) but not the same mother, so they're not triplets.

Vida, the old woman who tells the story, and who is the 3rd sister, mentions that there are twins in her story but doesn't precise that she's not one of them. That's what leads Leah, the one who listens, to think that Vida is one of the twins.
This is why the story is told in a way that we think there are only 2 sisters

Vida is the twins' half sister as they all had the same father (Charlire) but different mothers. Isabel, Charlie's sister, was the mother of the twins, Vida never knows her mother's identity.

The book is much better, and different.
