Restoration is very expensive, I was surprised it came in under 6 figures. You have to be in love with your car to have it restored, otherwise you're correct.... it can be far cheaper to just find another one.

But how much of the original car is left after restoration? From the looks of that Impala, it seems maybe about 25% of the car remains original. The body has new floors and panels. Not the same engine, tranny, wheels, interior, etc. the only thing that's left is some of the body and the chassis.

I can relate to saving/restoring your car. It could be a memory-- maybe it was your parents first car.. maybe you met your spouse in it... maybe it's your very first car and you want to relieve your youth.. people who cannot/do not understand obviously are not car guys/girls!
