Mr Mittens or whatever his name was:
How did he come back to life?

22 went in Joe's body. Joe went into the cat. The cat's soul went to The Great Beyond (they showed it on the escalator).
When 22 went back to The Great Before and Joe went back into his body, shouldn't the cat have died?

I think in the movie's "universe", animals don't get souls. So, the cat was simply "possesed" by Joe for a while, then returned to normal.

They do. There is a brief scene of the cats soul sitting on the threadmill to the great beyond after Joe enters the cat.

The cat went to the great beyond as we saw him riding the escalator. But since the cats body was an unoccupied vessel, a demon named Morgath the Unbowler is possessing him and intends to wreak havoc on humanity.
