What kind of sandwich was he making? I was thinking of recreating that. Does anybody know what it was? Ingredients?

Here in Miami it's just called a Cuban sandwich. Although in Texas he calls it a "something midnight" as if referring to his sandwich as a media noche (midnight) which is similar to a Cuban sandwich but uses a different bread.

The scenes in Texas depicted Carl doing business with world-famous Austin wood-fire pitmaster, Aaron Franklin. Carl purchaseS 4 beef briskets from Franklin to serve from his food truck. He then makes a special sandwich for the Austin punters that contains the Franklin pit brisket: “Austin Midnight.” He sets up the food truck at the concert locale (Austin City Limits, perhaps?).

That wasn't just a grilled cheese. Did you even watch the film? It's a Cubano or a play on the Cubano. Absolutely delicious sandwich.

He made several sandwiches and one was actually a grilled cheese. And yes, one was a Cubano and I agree with you, they are delicious. :)
