Am I understanding this story right? (spoilers)

When they played the joke, Hanna and Beth ran away in the woods. When they fell off of the cliff, the old guy tried to help them but they both fell. One of them lived and the other died. The one who lived had to eat the other one to live as long as possible. Because she ate a human it brought the windigo. I think I am understanding this. I just have one question. If what brought the windigo was one of those girls eating the other one, why when they showed whoever or whatever was chasing the girls it showed it like the windigo sees people?

The Wendigo was always there on the mountain. By her consuming the flesh of her sister, it in turn invited the spirit of the Wendigo to take her over and turn her into the monster seen in the game.

How far into the game are you? Around Chapter five or so and definitely by Chapter 9, you will find out that there are more wendigos around than just Hannah. Like the pp said, the spirit of the wendigo was always there and corrupts the human once he/she consumes human flesh. I always assumed it was another wendigo stalking the girls in the prologue.

I think the old man also uses a pair of IR/NV goggles. Which would explain the way his vision is similar to the wendigos.

No. The vision you see of Hannah and Beth at the beginning of the game was from a Wendigo. The Flamethrower Guy scared it off using the flamethrower (which you can see the light from it and hear the sound of the flamethrower when Beth and Hannah are hanging over the edge. This is before he pops up over the edge to reach out to help them).

I believe Mr. Flamethrower was distracted by a Wendigo for what it's worth. I have a theory that, well y'know he said he was bitten (in his notes) and that it is not infectious to be bitten, well I think he was bitten by a Wendigo that came up on him a year ago when he was trying to save Beth and Hannah. He dropped them to fight the Wendigo because he's a self preservationist, and the Wendigo bit him and possibly made his face nasty like it was. This is why he is kinda' angry at them all for coming back to the place a year later, because last time they came two went missing and he got bitten. He's angry at them for being so stupid to come back.

A thought after reading this is why didn't the flamethrower guy just leave? He knew what was going on this whole time.
