I don't know if she dropped out, there was never any statement saying she did. But Benoît Jacquot has been pretty open about the fact that he prefers Léa Seydoux to Marion… so maybe he dropped her for Léa.

I read an interview with Benoit Jacquot in June 2013, and he said that this film would have Marion Cotillard, but then I read an article in a french site from April 2013 where he said that he prefers Seydoux over Cotillard... so I'm confused, maybe both will star in this movie?
I don't think they'll both be in the movie. I find it very unlikely that either would accept a supporting role - like I can't imagine Marion being the lead with Lea being supporting (she's not in the right age range for the other role) and I can't imagine Lea being the lead while Marion is supporting. Just think either Jacquot got Lea to sign on and then ditched Marion or Marion dropped out.

I can´t imagine Cotillard as the chambermaid. I really liked Lea, but I concur with other poster about her being too young to play her. She looked like a bachelorette not a maid which made difficult to believe she would be trapped in such circumstances.
