Because she felt guilty about the whole bank robbery; one of her colleagues was shot and killed, and the guy who worked at the bingo hall just used her to (sneakily) get info out of her about the bank itself. Even though her mum and dad told her it wasn't her fault, she still felt that it was.

I agree with the weak writing; they need to bring Ms. Thursday back. I know Morse, in the end, never finds love, but that does not mean he and Joan can't be together now. The Morse series is many years in the future; many things could have happened by then for Joan and Morse not to be together, such as death, a break up, etc.
