I guess using a real Big Dog would have made the experience even worse (the CGI version moves much better). During the movie I wondered if the device would play any important role - after Ernest died I knew what his role would be. That was wasted potential. Ernest's boy seemed to have a very interesting releationship with it, a little bit more sci fi could have helped here.
In the end this is a simple and boring desert revenge drama as many dozens before. Having a pack mule waddle through it doesn't make it sci fi. The waterless situation is not sci fi - it is reality in parts of the US today and in other places of the world since God knows how many centuries.
