Why did he stab it on the fence like that?

I just assumed he was hacked off with how the situation was going and it was merely a sub-conscious demonstration of what he wanted to do to Foyle? Or something along those lines...

I just took it as imagery referring to the famous, "I want his head on a spike."

The apples were put in his coat by his wife, so if it was the first time he'd worn the coat it would be a reminder of her, which would trigger grief/anger.

Plus it suggests he's capable of violence, and there's the visual metaphor of a head on a spike. You could carry it through to the graveyard scene, the eaten apple as a symbol of decay.

Yes!

Those apples kept showing up at different times. Once time when Will is about to embark on one of his adventures, he takes a big bite.

The apple as the image of the fallen person in the Garden of Eden...Will was about to accept the apple and his fall.

All very deep, but you may be right about the symbolism. I just thought the wife [and then the son] wanted to make sure that Will got at least some fresh food each day. It was a sign of caring and affection.

I think the apple symbolized the dead wife's care for him. His leaving it on her tombstone was not a symbol of decay, but more like a message, "See? I'm eating more fruit like you wanted me to."

I think after Kate's murder, Will's son, Jamie, put the apple in his coat pocket. It seems to me, Kate did this to ensure Will was eating something healthy each day.
