Why did Neville.....(Spoiler!)
knife Dennis? Did Dennis order Eric to be killed? If so why he tell Neville to go save him? Also did Dennis survive?

I assumed it was because Eric threw Dennis over the railing when he was having his pissing contest with his dad and Dennis would likely retaliate.
And then, upon realising he was about to be stabbed to death, Dennis tried to bargain for his life by telling Neville to save his kid (or potentially because he was hoping Neville would give up stabbing him and run off to save Eric).
PS: Considering all the blood he was spewing up, I'd say Dennis didn't make it.
