So after watching an episode I am a little confused. I mean obviously this show is very contrived, with staged chicken-holding and cue-card reading. But is it meant to be a satire? Or is it actually meant to be be a reality competition? I definitely get the Spinal Tap vibe, but I can't find anything online that confirms this

Satire would involve wit and a sense of humor. Why would anyone with wit and a sense of humor venture into reality television? So, I think it would be safe to assume this is NOT a satire.
Nah, not satire. Just an ultra low budget knockoff of "Survivor".
