As a Texan I'd like to know who wrote this song. Or at least where I can hear it besides in this film.

I don't know if Curtis Heath wrote it or if it's a traditional song/lullaby adapted..?? Perhaps you know more than me who Curtis Heath is, but I'd definitely presume that if it was a traditional song, you would be likely to know it more than myself who resides on the other side of the world, ha!
