I don't know why but I have tried and feel like I've given it a fair shot but still don't really seem to care what is going on. Maybe I am missing something because I quite love Chris Odowd and Guest but this show is really a tough nut for me to crack.

They all go together, many jokes don't pay off until later episodes. If you were to judge them individually, I can see being ambivalent. But the last 10 minutes of the S1E8 pays it all off. It makes you look at everything you have seen in the previous episodes with new eyes.
