I'm not totally defending the waitress, but I wouldn't have handled it that way.I would tell the waitress that if someone asks a question that's confusing to follow it up with a probing question.
Maybe it threw her off because of the way it was asked. I thought it came across kind of like "who's buried in Grant's tomb" They're basically trying to expose how the wait staff doesn't know the menu. The plant could have just asked how the dish was prepared and we would have seen a better result. If she doesn't know what's in the dish, I'm sure she would be just as dumbfounded if not more so.
