Has the format of the show changed?

I know it's fake, but, it's still fun to watch. But the format on the newer series seem to have changed. Earlier seasons seemed to be more like Mystery Diners where the episodes spent more time "spying" and just briefly confronting the staff with a lot more anger, but, now it seems to spend less time spying and more time "confronting and training" the staff and it all seems more lovey.
