Question about henchman butcher/chef

Okay so this slck fvck likes to slap around his meat before preparing them and from what I had seen, is pretty thorough with his butchery. My question here is why was he holding himself on the floor in grief around the same time Dimas and co., was dying. I take it that since he was not in the room when the cutlet was FUGU'd then he must've known when he was preparing her and towards the end, outside the book display of the bestselling "Omnivoros", why in the hell did he not go after the author but instead lurched away??
