I remember seeing one with a Mexican restaurant which was a front for something bad - or something like that, but can't remember for the life of me what it was called... any ideas?

Villain "El Macho" is owner a Mexican restaurant named Salsa & Salsa
It's not Mexican culture related at all but similar movie I'd say Corpse Bride. Both have a slightly similar style, with this one made to look like puppets (but computer animated) and Corpse Bride being stop motion. Both involve death and the underworld/afterlife, and the Underworld/afterlife is kind of a party in both. And have characters that travel between the two worlds and get help from the dead to save those they love in the land of the living.
