Creatures didn't kill them easily?

All through the film it appeared the creatures were master killers who quickly dispatched and turned into exploding bags of blood the logger in truck or the hunters. So why were they so bad at killing the two sheriffs in the end? I mean what was the creature doing just holding him down by the neck and giving him enough time to stab it multiple times. Every predator knows to attack and kill immediately so its prey doesn't fight back before standing on top and looking around.

After multiple gunshot wounds, it was severely wounded and weakened.

The sheriff had plot armor. Otherwise, the creature would have killed him that first time when he went outside his house to investigate what his son saw, UNARMED. And there were other times the creature should have easily taken down the dingbat sheriff who loves to walk around in a perpetual daze, refusing to draw his weapon in the clear presence of danger.

Even Mr. Magoo is more alert than the Sheriff.
