Why empress insists that only kokachin should be her sons bride.. So much so that she even faked her Virginity.

2) She's Mongol and he needs a full mongol bride to quell the questions about his divided loyalties
3) Empress believes that she's the real "Blue Princess"
4) Empress interviewed her in order to determine if she is good enough and, apparently, she passed.
5) She's lived inside the Mongol capital for quite awhile so it may seem less risky thank bringing in another smoking hot, royal, Mongol, good enough gal from outside who may have an agenda of her own.

In fact they did. She tossed him the jewelry which he sold off to be able to provide for himself (and perhaps set a little aside?). Their plan was to flee together at a certain moment in time and for which they obviously needed some cash, hence the jewelry.

I think that the Empress is more concerned about having an heir and a clear line of succession "related" to the Khan. Just in case Prince Jingim is killed in battle. She also knows that Kokachin is not the true Blue Princess. When Kokachin is resistant to the whole stable boy thing (how hot was he?) she mentions that the child will not be of full royal blood. Chabi answers that the child will have no royal blood. I think having Jin's son would secure their future and the throne is some way in which she could have some control. If that makes any sense.

Chabi knew that Jingim was shooting blanks, as it were. Jingim had had three other wives and did not produce any children. When he failed to impregnate Kokachin, and the Kurultai was coming up, Chabi took matters into her own hands and tried to secure the future by having the stable boy impregnate Kokachin.

As the characters said in the show, with a grandson, Kublai had a straight line of succession and would be in a better position to defeat Kaidu at the Kurultai. Without that, some of the clan leaders would question the long-term stability of the House of Tolui.

Building on what y'all have said, I would add: Chabi wants to make sure that Kokachin doesn't end up with Marco. Notice that she has no interest in making the Blue Princess Jingim's wife until after she notices signs of affection between Marco and Kokachin. In season 1, I wasn't quite sure why this was a huge issue for Chabi, mostly because I didn't have a good read on what her attitude toward Marco was -- they didn't have many scenes together. But I think it becomes clearer in season 2 that she distrusts him as an outsider and is concerned with maintaining her own influence over Kublai.
