The setup for the plot doesn't make any sense

You don't just pack up and move your family away from everything. Riley and her emotions would have known they were moving long before the story started so the idea they are surprised they are leaving Minnesota is pretty stupid.

I'm sure in reality it didn't happen exactly as we see it in the film.

I would think that what really happened is that Riley's parents would have told her one day that they were going to be moving in the near future, and the reactions we see from the emotions would be how Riley would have reacted to being given this information by her parents at the time, not from the surprise at suddenly seeing a 'For Sale' sign appear in the front garden with no warning at all.

Pixar always prefer the whole 'show don't tell' method of storytelling to make it more interesting and fun for the audience. So think about what has more impact: Watching a potentially long conversation in which Riley's parents tell her that they are moving away, or 2 quick shots showing a 'For Sale' sign and a fully laden car about to leave? The latter is a much quicker and more efficient way of telling a story.

THIS. ^^ Audiences literally need to be spoon-fed every last detail these days, because they have become incapable of thinking for themselves. "Omg, are we supposed to believe it took less than a few minutes for the family to drive across the country? Yet, they have the nerve to reference stopping in Nebraska and that dinosaur tourist attraction! Plot holes, much? We didn't see them for the several days it should have taken them to travel from Minnesota to San Francisco, and every little thing that should've happened along the way, so it therefore only took them a minute to get there! It took Riley longer to walk to the bus station in her new city (again, I refuse to believe she must have stopped anywhere along the way because we didn't see it, therefore it never happened)! And where did Rileys entire first and second days at school go? Did she have just one class that day, and only lunch period the next day? I know we're supposed to buy into anything in animation, but these plot holes are too much. I hope somebody got fired for those blunders! Preposterous storytelling."

I totally agree.

I've since realised it wasn't a 'For Sale' sign, it was a 'Sold' sign. But you get the idea!

It's very possible that the talk about moving didn't register with Riley until the moving vans showed up.
