How much of this documentary was staged?

Loved this it was great and interesting but a lot of it felt like it was set up.
Scenes like the sleeping crew etc etc , made me think of the fun antics of Matt and Trey in their other mockumentary documentary. (When they were in the hot tub!)
And at around 39:07 you see a blurred out clock on the wall behind them and a subtitle that reads 7:29 am.
Did the clock read something else entirely and didn't jibe with their maybe fake time line?
Or maybe they didn't film it originally and so went back and faked up the scene later?
This is not a bash on the guys coz I really enjoyed this , but I'm just interested to know the facts.
