The character "Fang Fang," Sam's assistant, spoke only English in the entire movie except for one scene, where she blurted what I thought was surely Japanese.
But the actress is Chinese, so I am confused.
Can anyone confirm that she spoke Japanese?

If you are talking about the scene with the family, then no, no Japanese. She is definitely speaking Chinese.

She's speaking the local dialet!
