I think Patsey should have been played by a more attractive actress

I didnt really understand the casting decision of Patsey. The actress that played her looked like a boy and she was cast to be the object of lust by her master. But, it just was not believable. The actress should have been much more attractive.

I know it might be hard to make a slave look "hot or attractive" but I'm sure they could have found an actress that would have made it more believable. No slave master is going to want to bang his ugly slaves.

They can of course but she was portrayed in the movie (and likely in the book too?) as attractive and beautiful, something Eggs wife envied, so it would make sense to also cast her as such.

rapists don't always target women they find attractive - rape is more about power and control rather than lust. And I think Epps' obsession with Patsy was more due to her work ethic, since he was always so happy and proud with the amount of cotton she was able to pick. Her being probably the youngest there might've also had something to do with it
