Why was McCoy collection his mens pistols in the civil war scene, ep1?

Civil war era revolvers take a fairly long time to load compared to the later Wild West era ones. In the heat of battle it can be a dangerous and time consuming thing to do leaving you in a world of hurt. So as the others were retreating and probably no longer needing their side arms, devil anse decided he needed as much firepower as possible. Having all those revolvers would him a chance to hold the enemy at bay long enough for his comrades to get to safety.
