I'm disappointed, since the idea was rather good and the Alcatraz episode a great one.
I believe that is to cover the historical aspect of the show. Since none of the challenges and events the contestants face are historically accurate and are set up exclusively for the show, it applies to that. Also, the destroying of historical property is not allowed, so those breakaway walls or escape routes are completely fake props. It also applies to the guards, who of course aren't actual guards. The contestants and the way the game is played is real, but everything else is just used basically as a set with no historical significance implied.

I worked on the show. To the best of my knowledge it was not staged - ie, winners were not decided in advance, contestants were not paid actors. However the "rat maze" element of the show was exaggerated. There was only ever one path for contestants to follow in order to escape, all other potential routes were blocked off. However the various impediments and challenges were real.
