Whether or not he was obsessed with blonde hair was never explained or even alluded to. His sister had blonde hair, the relevance is questionable at best, so I agree with you on the that. But there is no definitive answer to this question.
Secondly, who knows how he felt toward his family? He may have seemed loving, but a man who is this obsessed about a childhood tragedy, to the point of killing other women to live a fantasy, most likely cannot feel love in the same way you or I do. Not to mention that the only thing we know about his family is that they knew nothing of the terrible things he had done. That does not mean he was loving, only that he was a good liar.
Thirdly, I have no idea if he slept with his sister. The movie points to him being distirbed and many real life serial killers are motivated by a sexual desire/deviancy.
