I'm surprised at how many people don't get this

A lot of people are complaining about the way Conan acts towards others in these documentary, but he explained it at the very beginning. If he doesn't like something or is mad/frustrated about something he'll express it in a jokingly manner. The people who work with him know this and know how to deal with it. That's how he gets things done.

As far as the meet and greets go, I am conflicted on what to think. On the one hand it's all very exhausted for him etc but on the other hand they did sell those VIP tickets. If he didn't want anyone but his friends backstage after shows he shouldn't have sold VIP tickets, easy.

I don't think he's a hypocrite, I think he's just a person. It takes a lot out of him to be a personality all the time and people are ridiculous. Like that one guy asking him to do the puppet bit. He's not a trained dog, he doesn't have to perform bits for you. But in the end he did it anyway. And the dancer who brought in her whole family and just lingered was extremely unprofessional.

I thought those people were just friends of one of his staff or some crap and they basically told them they could back there and meet him? I know VIP meet and greets were sold on that tour but they had specific designated times that it took place, they weren't backstage passes. Yeah, I'm pretty sure that's what that was and that's what set him off about it as he just wanted to relax for a minute after doing the show for 2 hours straight then because of one of his crew promising this family or whoever they were he had to deal with them. I don't think he was being unfriendly at all as he could have said "no" and turned them away but he still chatted them up even though he was disgruntled at the situation.

Also, I highly doubt he had anything to do with the VIP thing asides from agreeing to do it. 98% of the time meet and greets are coerced by the talent's management and the celebs themselves don't see a dime from those VIP sales as it goes to the management or something else. He likely agreed to do it for the hell of it like many other celebrities tend to do. Comic-Con is a great example of this as people complain about paying to see their favorite stars but almost always it's never the celebrity demanding the money but their agents/management team.
