How in Hell do you err like a license plate changing on a car?

I can understand the length of a cigarette or the level of a drink in a glass fluctuating from scene to scene (although I think the editor should be kicked in the crotch after rubbing his nose on a print - sub equivalent punch if the editor is female).

Spoilers Ahead!

But how do you make a mistake like the license plate changing on a car? Do you really have to call out the crew and say, "Okay everybody, don't change ANYTHING on this car until we are through filming!"? Or "Don't wash the blood smear off the big truck with the bomb in it!"?

Isn't continuity part of an editor's job?

Often the cars are owned by regular people and if a scene needs to be reshot weeks later they could have had different cars, the original gets new plates or who knows... movies aren't filmed in the order we see it...
