I don't think it's that children can't handle death, but they don't want it to be that kind of show. Even at its darkest the show is fun, light-hearted and colorful.
Unlike Multiplicity, an adult comedy(thus not light hearted and decidedly dark), where the clones of the main character all live happily ever after owning their own business away from the original. My Little Pony however, has a light hearted episode in which Pinkie Pie makes clones of herself which are obliterated from all existence by Twilight Sparkle because once given life, these abominations must be destroyed and whomever is left of the many Pinkies is the one they want. You know, fun and light hearted entertainment for kids.
My statement was about the fact death COULD be handled in the show if done right. I have never asserted that having Sunset Shimmer's double be killed is what they should do, or is what I want them to do. Applejack's parents though, are another story.
As fan theories the human sunset death/killed scenerio is fun, but it doesn't fit the style of the show.
I would never suggest having Sunset Shimmer's doppelganger explained as being dead in cannon. That but was simply my conjecture. If you want an alternative, my friend thinks the human version simply ran away from home and her family took her pony version in. That would fit the general tone of the Equestria Girls movies and address the issue of her double. Incidentally, this is the explanation I would prefer the movies officially take up.
