Why did everyone become affected on the same day within a few hours ? Surely with the causes of it this would have happened to people over a period of time? Rather than everyone at once...??

Maybe that day was when the parasites finally made it close enough to start infecting people.

My guess would be, given that it's 4th of July weekend, a great number of people were all in one general area and most were either swimming, drinking the local water or both.
