...just give Mrs. Nugent a burial himself somewhere in the middle of nowhere where no one would find her and then just say she disappeared? That's what I would've done if I was him.

Because, as stated in the film, he was sorry for what he had done as soon as he shot her and he wanted to face his punishment; he just didn't have the courage to turn himself in to the police.

That is what his lawyer said. He himself stated everyone deserves a proper burial.

Also, he had too much respect for her remains to do that, as per his vocation.
