I've have watched both of the series (probably more than I should) and I gotta admit that I'm kinda obsessed with the whole Avatarse. As a result of not (hopefully yet) getting a third installment of the story, I am looking for other shows that are as good as both series regarding the story itself, the storytelling, characters and their development and if animated the animation.
Do you have any recommendations?

You'll want to get into other anime, there is stories about many different things so you can watch what hooks you and skip the rest. Many of the high quality anime also have a set number of episodes, though there also great anime that are ongoing.
