What was the point of the sounds/audio ("cut!".."action") appearing at the end of the movie? I don't get it

It was symbolic of the change from the silent era to talkies and George's acceptance of that---and of his renewed dedication to life.

To realise George had a thick French accent which revealed why all along he could not make the transition to talkies as the audiences back then wouldn't have be welcoming. A lot of silent movie actors in the 20's who had foreign accents never made the switch to talking pictures.

It's not about that. If you look at the scene where he's shown the demonstration of a "talkie" he finds the whole thing ridiculous and doesn't want to do it.
