I thought these things were explained quite well over the course of the film, except for her being biracial, which didn't need explaining - lots of people are biracial, why should it need special "explaining" that her father was "white" rather than just stating it and moving on with the plot?
As the OP pointed out, Dr Rand has a compulsive eating disorder, which she manages by attending a 12-step group regularly and self-discipline.
As for Dr Rand's relationship with her father, it was actually stated several times that she hadn't seen her father since he walked out on her and her mother when she was a child, so it was clear that Dr Rand was trying hard to re-establish a functional relationship with her father, but that their history kept making that difficult. Another reason she was embarrassed by him was that the other camp workers didn't know he was her father, and she was reluctant to tell them that because she hired him over someone the coach said was more talented.
She also appears from numerous examples such as those with the coach, to be painfully shy, or possibly have some type of social phobia, in contrast to her obvious intelligence. I'm thinking that it is this that makes you think she looks like she "is going to break out into tears ANY second".
